Our award-winning oysters are grown in the pristine class A waters of Carlingford Lough. They feed from the naturally occurring plankton and the unique mix of local minerals, which wash down from the mountain streams, and produce our oyster’s distinctive taste, texture, and colour. Customers and Award judges find delight in the crisp, fresh and pure mineral taste of our plump and meaty oysters.
Taste description
Tasting our oysters feels a bit like diving into the ocean, where your taste buds are washed over with the salty freshness of sea spray, and then the sweet flesh dissolves on the palate with an earthy minerality that is creamy in its delivery. After the initial briny taste, they burst into ripples of flavour in the mouth. Minerals flow round, sea weeds and hints of citrus.
